Crispy briks with mirabelle plums

Ingredients (serves 4):
- 3 sheets of brik pastry
- 15 mirabelle plums,
- 15 damsons
- brown sugar
frangipane:
- 2 eggs,
- 100 g (3.5 oz) sugar
- 100 g (3.5 oz) ground almonds
- 100 g (3.5 oz) butter
caramel:
- 200 g (7 oz) sugar
- 20 g (0.7 oz) slightly salted butter
- 15 cl (5 fl oz) cream

Preparation:
Caramelise the sugar, deglaze with the cream and thicken with butter.
Make the almond cream: Mix the eggs and the sugar, then add the ground almonds, then the melted butter.
Cut the sheets of brik into 8.
Stuff each portion with the cream and stoned fruit, sprinkle with brown sugar and bake at a high temperature for 5 minutes.
Dress with caramel while still warm, serve with a scoop of sorbet.
